Alright, so I have a confession to make, I have only eaten red velvet cupcakes very few times in my life, however, I have been highly intrigued about these yummy delights and what goes into making them..
Hence began my search for an awesome recipe and among other options, this one seemed to be the most elaborate and methodological..
Recipe 44: Red velvet cupcakes with cream cheese icing

So the recipe is for red velvet cake and not cupcake but it works perfectly well for cupcakes!! The only problem, that it is a real chaos with the multiple bowls for different ingredients and to add to the mayhem, I was really pressed for time while making this one. So I would suggest you guys plan a little and keep all different bowls ready before you start mixing the ingredients.
Also, the red food coloring is very quick in leaving out colour and after a while it looked I have been playing “holi” all by myself in the kitchen :p.. so just be careful while dealing with this one.
The cupcakes were pretty great, although they could have used a little more moisture so next time I will add a tad bit more of butter milk..
Ooh, that reminds me, for buttermilk, kindly use the plain buttermilk (chaas) available at Mother dairy and not those masala ones available at all grocery stores :D..
Another very important fact about cupcakes, kindly fill in the batter only to 3/4th of the cupcake holders capacity else they will flow out while baking.. I have probably have said this before but I can’t stress on it enough it seems 😛 (yes, this did happen to me!! *embarrassed smiley*)
Time spent in Kitchen: 1.5 hours including baking time
Price range of the total cost of all ingredients: INR 300-350 ( I only made half of the recipe.. makes 6-7 cupcakes)
